BBQ PORK NACHOS - sweet, salty, cheesy - 'nuff said

 


This sweet, salty, crunchy, cheesy, gooey masterpiece is proudly brought to you by...drumroll, please... Leftovers!
 
I had loads of BBQ Pork leftover from my Dad's birthday party, onions from my garden (I like to use up the green tops- they're just as good as green onions and why waste something you worked so hard to grow!) and the flowers and tops from my cilantro, as it bolted and I trimmed them all off.
 
If you need a lunch for work or a quick supper, this dish is sure to please and will empty your fridge of leftovers in the best way possible.
 
time: about 10 minutes
makes: 2 servings, can be easily doubled, etc,
YOU WILL NEED:
3 cups tortilla chips
3/4- 1 cup BBQ pork, chicken, or beef
1 small bunch cilantro (I used the tops of mine, since they had bolted)
1 onion top or 3 green onions
1/2 cup shredder sharp cheddar cheese
 
You can also add your favorite things: sweet corn, sour cream, lettuce, radishes, the possibilities are really endless!
 
Just spread out the tortilla chips on a microwave-safe plate or a cookie sheet.  Top with BBQ meat, cheese, onions, and whatever else you like.  Pop it in the microwave until warmed through and the cheese melts, about 2 minutes.  If using the oven, bake at 400' for 5-10 minutes, watching closely.
 
Pull them out and top with cilantro and any other greens or things that aren't good when ovened and wilty.
